Cooking class at Nostalgia Latin Market
Hendrik (“Enrique”) Varju is of Mexican and Hungarian heritage, his mother born in Guadalajara, Mexico and his father in Budapest. He spent his childhood cooking and baking with his Mexican mother. He has been running our cooking classes at Nostalgia since 2017 and we’re pleased to have him return to Nostalgia Latin Market this coming fall for another set of traditional Mexican cooking classes.

Best Guacamole
Hendrik will start you off with the Best Guacamole You’ve Ever Had featuring garlic, shallots, pickled jalapenos, cilantro, lime juice and toasted coriander seed. Then he will show you how to make “Frijoles Borrachos” (“Drunken Beans”) pinto beans featuring bacon, white onion, serrano chiles, cilantro and gold tequilas. You can eat it these appetizers on top of Mexican Tostadas or whith Nacho Chips.
After the great Guacamole & Frijoles Borrachos, you’ll enjoy some fantastic Enchiladas Rojas Con Pollo (“Chicken Enchiladas with Red Sauce”). They are crunchy but soft at the same time, these enchiladas feature finely cut chicken flavoured with cumin, garlic, Mexican oregano, paprika and salsa, topped with onion, lettuce, cilantro, Crema, cheese “duro blando” or “Cotija” and a red enchilada sauce made with ancho and guajillo chiles.

Gelatina Tres Leches
Hendrik will finish off the evening serving Gelatina de Tres Leches with Kahlua. A delicous Mexican gelatin made with milk, evaporated milk and condensed milk, topped with a splash of Kahlua. There is no better way to finish off a Mexican meal!
